Vegan Kerala Style Tacos

Here is our version of Tacos Kerala style . Hari’s much loved LENTLE CAKES is there, except I changed them little by rolling them in a mixture of coconut shred and sesame seeds, I just have to put coconut in everything.😄🥥 And I also put some shedded carrot to make them more soft, but if you want them crunchier skip the carrots.  I used a Raw Vegan Mayo, as everyone knows raw eggs could be kind of dangerous in a hot climate. You can easily swap the lentil cakes for some fish fillets instead, ( dip the fillet in flour, then a whisked egg and panko mixed with coconut shred).

Ingredients: 🌶Haris Lentil cakes:

2 cups red lentils 

1 big onion

(Garlic and or Ginger)

(1 cup Finally shredded carrot)

(1 pinch popped mustard seeds and fried curry leaves)

1/2 cup chopped fresh coriander 

Salt and pepper

1 pinch Cumin 

🌶Pickled red onion:

1 red onion sliced to rounds

1 cup of water 

1/2 cup sugar( try to use a healthy alternative)

1/2 cup apple cider vinegar 

1 pinch salt

🌶Mango Salsa:

2 mangoes chopped in cubes

1 pressed lime+ zest

1 table spoon apple cider vinegar 

2 table spoon olive oil

1 finely chopped red chilli

1/2 a cup chopped fresh coriander

🌶Vegan Cashew nut Mayo:

1 cup cashew nuts, soak them for at least 1/2 hour 

1/2 cup water 

2 teaspoon apple cider vinegar

2 teaspoon lime joins

1 pinch himalayasalt

1 clove garlic 

1 teaspoon Dijon mustard

Some Sriracha hot chilli sauce / ore some other chilli paste

🌶Avocado cream

1 big avocado

Salt 

Chopped chilli

Some lime juice

Cooking instructions:

🌴Soak the lentils in water for about 1/2 hr, drain the water and mix them with a hand mixer ore in the mixer, not to fine, they should have a litle texture.Shred the onion, garlic and ginger, put all ingredients together ,form small cutlets and toss in a mixture of coconut and sesame seed,fry in a coconut oil or sunflower oil

🌴heat up the the ingredients for the pickled onion( except the onion) let in cool dawn and put in the onion,let it bee in the fridge for some time

🌴Chopp the mango into cubes, put the ingredients for the dressing together and toss it in

🌴Soak the cashew nuts for at least 1/2 h, put everything for the mayo together in a blender,u can also use a hand mixer, and blend until really smooth 

Serve with salad leaves, roasted corn,cooped salad ore chapati or paratha or tacos😀
