Vegan Mango Beatroot Salad
Right now we are in the middle of the mango season which runs from late March through to late July. Mango has high levels of antioxidants and is packed with vitamin A and is so delicious.
I was told there used to be a lot of mango trees in Kovalam time past. ( Maybe we have to plant one in the garden!) As it’s my favourite fruit, I always buy it if it’s available. This version is made with cooked beat roots but you can also do it Raw… if u have less time for a spontaneous dinner… and want it more crispy you just skip cooking the beat roots, just slice them on thinnest setting on the mandolin. You have to slice the mango with a knife otherwise it will get too mushie.🥭
Ingredients:
Ripe Mangoes
Middle size Beat Roots
Dressing:
Almonds( that I caramelised with honey)
Olive oil ( or what is available)
Lime juice + zest
Fresh Coriander + Fresh Mint
Sea salt + chilli+ black pepper
Cooking instructions:
Cook the beat roots until soft, not too soft let them cool
Slice them very thin on a mandolin ore finely with a knife
Slice the mango as fine ass possible, decorate a plate in a nice pattern
Mix all the ingredients for the dressing in a blender or with a hand mixer
Taste so u get the right balance between the salt and the sure
Rost and honey glacé the almonds, hassle nuts are also very nice
If you want it totally RAW you can exchange the nuts to pomegranate seeds or just don’t
